Step inside and the atmosphere shifts instantly — intimate, composed, and unmistakably special.
After 12 years living in Bali, I don't impress easily. This place did.
A Front-Row Seat to the Craft


Seating is limited to a U-shaped counter for six or seven guests, with the chef at the center — each piece of sushi prepared right in front of you.

Floor-to-ceiling windows frame an unbroken panorama of Sayan's deep jungle — pure Ubud.



By design, the jungle unfolds behind you rather than in front — the chef wants your eyes on the sushi.

Before or after your meal, make your way to the open-air bar just outside.
It extends out over the jungle — open, breezy, and completely Bali.


A pre-dinner drink here sets the mood perfectly; a post-dinner one lets you hold onto the evening a little longer.

The first thing you notice at your seat is the elegant serving board — the stage for what's to come.
Beside it, a handwritten menu listing the day's selections.


The ◆ symbol marks three surprise courses — the chef's secret additions for the day.


Each piece arrives the moment it's made, at a pace that feels perfectly calibrated.
The Rice That Makes the Difference


The shari — the seasoned rice — is made with red vinegar sourced directly from the Ginza restaurant.
Its mellow depth draws out the full flavor of fish sourced both locally and from Japan.
Beyond the Sushi
What caught me off guard was the quality of the palate cleansers between courses.

The bagna cauda — served with a house sauce of white and red miso blended with cream — was so good I wanted seconds. East meets West in the best possible way.


The thoughtfulness extends to drinks, too.


We brought our own sake (corkage: IDR 600,000) and were presented with beautiful ochoko cups to match.
