Where to Find Madu Cilembu

It's a small shop in Denpasar, about a 40-minute drive from the airport.

The shop is called Ubi Bakar, which simply means "baked sweet potato."

I've spotted the same signage while riding around Canggu and Kuta too, so it seems like these shops pop up here and there in local neighborhoods, not just this one spot.

Out front, rows of raw sweet potatoes wait to be baked.

Their skin is pale, nothing like the sweet potatoes you might picture — they're grown in Cilembu, a region near Bandung on Indonesia's Java island.

Buying Madu Cilembu

The potatoes are baked in-store and kept warm in a box, pulled out fresh whenever an order comes in.

Sold by the kilo, baked ones run 30,000 IDR (~$1.80) per kg, while raw ones are 20,000 IDR (~$1.20) per kg.

Both raw and baked potatoes are sold here, so just say "Matang" (meaning "cooked") or point to the baked ones when you order.

A full kilo felt like too much, so I asked for 500g instead — no problem at all.

500g got me four whole potatoes for about 15,000 IDR (~$0.90) — such a steal!

I tried asking if I could just buy one — nope, not happening (laughs).

They're wrapped in newspaper, then tucked into a plastic bag to go.

Buy a full kilo, and they'll pack it in a bamboo basket — a cute little gift idea too.

Note that there's no seating to eat on the spot.

Inside the tiny shop, potatoes were being baked non-stop — clearly a local favorite.

What Does Madu Cilembu Taste Like?

Here it is — the baked Madu Cilembu!

The inside is a deep golden color, similar in style to Japan's prized Anno sweet potato.

The texture is dense and chewy rather than fluffy, with an intense natural sweetness.

It's delicious warm, but my top recommendation is chilled, with a sprinkle of natural sea salt.

Cold and salted, the sweet and salty flavors take turns hitting your tongue — it's endlessly satisfying.

I'd recommend Bali's own natural sea salt, from Kusamba or Tejakula.

Too far to visit in person? You can order through Gojek or Grab instead.

Just search "Ubi Bakar" in the app.

Both apps sell it by the kilo, minimum.

Can't finish it all in one go? It keeps well in the fridge for about 5 days.

Store it in a sealed bag, like a Ziploc, for the best results.
