Their signature roll looks like salmon sushi — but as a raw food dish, no fish is involved.

Papaya, believe it or not, stands in for the salmon.

The pink topping and the filling are both papaya, sliced to mimic the real thing.
YUKIBut it tastes just like salmon! That silky texture — you'd never believe it's papaya.
